These natural products are superior in their ability to handle temperature fluctuations and can be kettle cooked, retorted, refrigerated and/or frozen without imparting negative attributes to the final product. When preparing thermally processed and/or dry mix foods, heat treated products also demonstrate acid and shear stability.
